Production Methods: All our products are produced in small batch by hand. Our preserved condiments (Herbal Jams) are slow cooked whole fruit root and spices preserved in Jaggery, a raw unrefined Indian sugar cane. Our Ferments are mostly locally sourced, salt fermented with no Vinegar, no Water in large crocks for usually 6 weeks depending on the vegetable.
Our HERBAL JAMS are inspired by the original functional foods of Ayurveda; Leyhams. Potent ancient and beneficial combinations skillfully preserved in Jaggery, a lightly sweet unrefined sugar cane juice, flavors are phenomenal and complex. Each HERBAL JAM with its own balance of the six tastes recognized in Ayurveda; Sweet,Tart, Salty, Bitter, Hot, Earthy, giving both a satisfying tongue experience and exceptional properties of wellness. Naturally Vegan and Gluten Free, our jars have long shelf lives, 2 years, unless specified.

INJI PULI / Ginger Tamarind HERBAL JAM: Organic Ginger Root, Jaggery (unrefined cane sugar/India), Tamarind, Vegetable Oil, Black Pepper, Salt, Asafoetida, Fenugreek, Mustard Seed, Turmeric Powder, Cumin, Curry Leaf. Perfectly balanced, strong layered flavors unfold on your palate, ginger-hot, sweet-earthy, fruited-tart. Traditionally called INJI (Ginger) PULI (Tamarind), this Herbal Jam, a favorite at feasts and festivals, has been used for centuries in South India as a digestif. With a spicy and aromatic kick, INJI PULI is unusually versatile, from savory to sweet, add it as a topping to appetizers, mains, desserts and drinks! Fantastic on a cheese plate, grilled meats and veg., potatoes, omelettes, yogurt, ice cream, chocolate! For a drop dead chocolate cake, mix into buttercream frosting or spread it by itself on a heavy chocolate torte! *Ginger Spicy.
TURMERIC GINGER HERBAL JAM: Turmeric + Organic Ginger Rhizomes Pasted, Jaggery (unrefined cane sugar /India), Tamarind, Lemon Juice, Vegetable Oil, Whole Black Peppercorn, Fenugreek, Asafoetida (GF), Mustard Seed, Salt. One of our most popular products, delicately sweet and earthy, accented with whole pickled black peppercorns, this ancient combination of jam has an amazing flavor both for taste and wellness. In traditional Ayurvedic health practice, Turmeric & Ginger aid against inflammation and pain, black pepper assists in amplifying the benefits of the sibling rhizomes, while tamarind, jaggery and a little oil help acclimate the the body to do so. Try it mixed in yogurt as a dip or on rice for starters, on avocado toast, eggs, chicken, chickpeas, potatoes, cheese, fish, even with an aperitif!
WHOLE GARLIC Preserved: U.S. Grown Garlic, Jaggery (unrefined cane sugar /India), Tamarind, Vegetable Oil, Lemon, Salt, Fenugreek, Asafoetida, Black Pepper-corn, Mustard Seed. Sweet, deliciously pungent, slightly hot with a lovely lingering black pepper after tone. Comparable to a black garlic and a bit like the best bbq, slow roasted whole garlic cloves preserved in rich tamarind, jaggery and spices. Eat the cloves whole, slice them up onto meats (sausage!), cheese, mac & cheese, chevre, roasted potatoes, pasta, sandwiches and save the sauce for more. Kids love them! *This product gets better with age.
RHUBARB GINGER Herbal Jam: (seasonal) New York Grown Rhubarb, Jaggery (unrefined cane sugar /India), Organic Ginger Root, Black Pepper, Vegetable Oil, Lemon Juice, Mustard Seed, Salt, Fenugreek, Asafoetida, Cumin, Curry Leaf. A perfect balance of sweet, sour and ginger heat, giving a well rounded, divine and smooth taste, a local adaptation of the original South Indian digestif, Inji Puli. We really love it on grilled cheese, pork, lamb, sweet potatoes, with lentils, drizzled on fruit! *Ginger Spicy.

From our Seasonal Salt Pickle Collection, this pickle is a proud Finalist in the Good Food Awards (2019). A tasty and sophisticated happy marriage of an Indian Achaar and a Pickled Relish is layered with rich flavor. Fresh picked green tomatoes fermented in salt for 6 weeks, set in a thick bright brine of ginger / garlic and seasoned with our own hand milled spice combination. Brightens up any dish, eat like a relish or a marinade! Great with meats, roasted chicken, barbecue, beans, picnic, cheese and hummus.
GARLIC SCAPE PICKLE: (seasonal) Garlic Scapes (New York), Salt, Fenugreek, Mustard Seed, Asafoetida, Cayenne Pepper. Upstate New York is a perfect region for garlic growing, only the garlic flower, or scape has little to do after being cut off to let the underground bulb grow big. Our deliciously fun and crunchy salt (lacto) fermented SCAPER (Scape / Caper!), is crafted with all New York grown scapes and an ATINA combination of energetic spices, with no vinegar, no added water and no cucumber. All the benefits of raw Garlic bulbs, but less effusive! ATINA's Garlic Scape Pickle is a crowd favorite, akin to a caper, but local! It is great on really everything! From Hummus to hotdogs, salads, mashed potatoes, eggs, pierogies, tacos, bagels, pizza, cheese, dinner, breakfast, lunch, the list goes on!
