We are a 3rd generation dairy farm in Pine Bush NY. doing vat pasteurization of cream line white and chocolate milk from our own herd of Holsteins and Jerseys. Our New York State Grown and Certified products go from cow to carton within 5 hours. Our direct dairy system is one of a kind for New York. Our milk is sent from milking parlor, where our girls get milked, directly into a vat pasteurizer, not pumped from bulk cooling tanks. The difference is the milk leaves the cow at body temperature 100 degrees, we then heat it to 146 degrees and hold for 30 minutes. It's then chilled for bottling. This system is more gentle on the milk which helps preserve flavor while using less energy to heat milk.
